Cream
of Peanut Soup is a traditional Ugandan recipe for a classic soup of
milk, chicken stock and peanuts thickened with cornflour (cornstarch).
The full recipe is presented here and I hope you enjoy this classic Ugandan version of Cream of Peanut Soup.
Ingredients:
•2 tbsp cornflour
•700ml milk
•700ml chicken stock
•400g ground peanuts
•2 tbsp grated onion
•2 tsp salt
•1/4 tsp cayenne pepper
Cream of Peanut Soup Preparation:
Add
the cornflour to a deep pan and slowly stir-in the milk, whisking until
smooth. Add the stock, peanuts, onions, salt and cayenne pepper and
under constant stirring bring the mixture to a boil. Allow to cook over
medium heat for 5 minutes, whisk brisky, strain to remove any large
peanut pieces and serve in soup bowls.
